Here is an all-time favorite of mine:
4-5 frozen chicken breasts
3-4 heads of broccoli
1 cup or more of Miracle Whip
1 TBSP of lemon juice
1 can cream-of-chicken soup
Curry powder to taste
Large bag of shredded cheddar cheese
Italian bread crumbs
Bake chicken at 400 degrees until fully cooked. Cook broccoli in microwave until done. Chop off ends of broccoli and break apart. Tear chicken into small shreds when cool. Preheat oven to 350 degrees. Spray a 9x13 inch pan and then layer in order: broccoli and chicken.
In a mixing bowl, combine soup, miracle whip, lemon juice and curry powder. Pour over casserole and spread so covering entirety. Sprinkle cheese all over until all gaps are filled. Sprinkle italian bread crumbs over top. Bake at 350 for 45 minutes, an hour if refridgerated.
This is a little time consuming at first, but it is so delicious! It can also be refrigerated the night before your big meal.
